BTW that's a Blue Cheese sauce - Roquefort Fillet with bacon and Fig Jam....mmmmmmmm ....medium rare. :D

I agree . I think all the best feedlot beef from Midwest graded the highest goes To high dollar East and West coast markets. And we get their beef grown on cactus and sage-brush !!..............MO
