The earth is not flat nor is it round ....
it is an oblate spheroid as are most if not all the planets if I remember correctly.
The radius of the equatorial axis is greater than that of the polar axis.

Yes, they do take the earth's curvature into consideration if the building is long enough, which admittedly is rare. Look it up. If you want a shortcut, look up Linear Accelerators or the International Linear Collider.

When I get out of the shower, the water clings to my ball sack all the way around. That's not a flat surface.

On an ocean voyage as an example - two yachts sail directly out from port, after about 25-30 miles, they both disappear form view.

And yet oddly enough, the crew on both yachts can still see each other, and notice no change in their position relative to the sky and water surface. No bumps or slides are experienced when they are lost from sight by the people on shore.
