What temp thermostat to use?

Exactly- the thermostat allows the engine to reach operating temp faster be restricting the flow.

Rarely have I ever seen system where the hemostat closes after op temp is reached.
 
Ok got me some NGK plugs, 180 thermostat, digital 6AL MSD box, plug wires, msd2 coil, header gaskets, ARP 12 pt crank bolt, water pump pulley bolts. That sure escalated quickly
 
Luckily I was able to finish a job on this plow truck last night. Doing a 2 tier deck for my brother in law next.

I know, I planned on having this car on the road a couple months ago but it slowed down as I waited on the motor, now I have it and I need the trans still, still have my fingers crossed to drive it this year.

Rarely have I ever seen system where the hemostat closes after op temp is reached.
A properly operating thermostat should never be fully open (unless the engine is running above the rated thermostat temp). It regulates the engine temperature by opening and closing as needed, somewhat like your cruise control opens and closes the throttle plate to maintain a requested speed. It doesn't go "full open" until the coolant temp reaches 15-20 degrees above it's rated temperature.

Those NGK 7s should be good. I am using the next step colder 8s in the 500" stroker engine, and 6s in the mild 505" stroker. What fuel are you running?
I ran my old 451 engine with a 160 thermostat to help the 11:1 compressing engine run on pump gas, but I prefer 180 degree.
Found out that the 500" 12.4:1 compression stroker running E-85 hates running the colder thermostat.
And on my 505 10.3:1 stroker (mid cam) with EFI, the 195 thermostat seems too hot. The Edelbrock EFI recommended the hot thermostat, and I was also using the Dakota digital fan controller because the old Edelbrock EFI (narrow band O2) did not have fan control, but I am switching the controller to FAST XFI 2.0 that will control the fans and other externals (A/C, wide-band O2) without external boxes. Also taking out that 195 thermostat and putting a 180 thermostat in.

Builder recommended using 110-112 fuel.
 
Good luck finding that! Or maybe you have that in Indiana - best we have in CA is 91. I only wish I could get even 100. They sell at a very very few stations for $10 a gallon. i

It’s not at gas stations that I know of, but both my builder and race track sell it.
 
How much a gallon? I’m getting jealous........
I can get 5 gallon barrels for $65 through my builder which is a pretty good price. can’t temember how much he said for 55g drum, don’t know the track prices

That’s $13 a gallon - does your car take pump gas? If not that’s a pretty penny for fuel to go cruising around. But at least you can get it. Your 440 will love that stuff.

He recommended using race fuel, 12:1 cr so maybe I could do a mixture? I’ll have to talk to him again about it
 
I buy Race-Gas, an octane booster and add a pint to my gas to give me a better jolt from the 91. It’s cheaper to do that and a bit easier to deal with. It though.

Seem to work ok? I was thinking I might be able to do 93 at the pump and add booster. Never used it before though

Try the Race-Gas - you can get it through Summit Racing - shipped to your house in 1 liter cans. My 440 is stroked to 494 and puts out 555 hp. See,s to like it just fine

Lol, I can drive 15min and be at the original store, and my youngest worked there for a number of years. Their service/support is top notch. I go in and sometimes the cashiers say "hey are you so&so's dad?"!!
